REVIVAL of Flower Wine
In 2012 Hugo Bonjean and his wife Ilse opened the doors of the Spirit Hills flower winery in Alberta, Canada. The Bonjean's hail from a long lineage of 7 generations of French winemakers with still existing vineyards in Blanzat, France. Given that grapes could not grow in the harsh Alberta winter climate, Hugo and Ilse decided to develop on old settlers wine, dandelion wine, into a first class award winning fine dining wine. When Dande became a huge success with exports to Europe where it was served in Michelin star restaurants the Bonjean's started to concentrate on wines crafted from other flowers. When the Alberta government shut the winery down with Covid, the Bonjean's linked up with Manny Ortiz in Texas and helped the Florvino team to develop wines with flowers from Texas. Their son Bjorn is now the head wine maker at Spirit Hills which he runs together with his business partner Carly.
